Known as the real (Maryland) blue crab, Callinectes sapidus is native to the Chesapeake Bay, which is connected to the Atlantic Ocean on the east coast of North America. Over the years, it has spread as an invasive species in the Mediterranean and has reached a certain population in the Aegean and Mediterranean estuaries in Turkey.
Crabs molt to grow during their life cycle. By inflating itself with water, the crab comes out of its hard shell, refreshed and soft-shelled. Immediately after this shredding, it is taken from the water, and the shell of the crab is not allowed to harden. The process of changing the shell also differs according to climatic conditions. While it is possible to follow this cycle in farm conditions, it is not possible in nature as the crab hides in hollows, between stones and rocks to hide from predators. While the supply of crustacean crabs can be made through hunting in nature, it is not possible to reach soft-shelled crabs.
Blue crab (Callinectes sapidus) is a delicious crustacean species that are rich in protein, vitamins, and minerals, and its meat has a unique aroma. The blue crab has been consumed for centuries in America, both as hard-shelled and soft-shelled. The shelled blue crab, which is mostly consumed, is steamed or cooked in the oven, the shells are broken and the flesh is eaten. Soft-shelled crab can be cooked in various ways such as stir-frying, deep-fried, and grilled without any hassle, and can be consumed as an aperitif and in salads or eaten as a crab burger. After removing the shells of a crab with an average size of 100 g, approximately 10-12 g of meat can be consumed. A soft-shell blue crab of the same size can be consumed as a whole by desire.
Soft-shell blue crab production stages, for which we started R&D studies in 2019, were completed in 2021 and industrial production was started in 2022. In our soft-shell blue crab production facility, which is the first in Turkey, all stages from egg to plate are checked by expert aquaculture engineers and veterinarians and presented to consumers.
